Ingredients
1/4 cup unflavored gelatin
1/2 cup cold water
1/2 cup boiling water
Food coloring (assorted colors)
1 teaspoon vanilla extract (optional)
1/4 cup granulated sugar (optional)
Instructions
1. Bloom the gelatin by sprinkling it over cold water and letting it sit for 5 minutes.
2. Add boiling water to the gelatin mixture and stir until completely dissolved.
3. Stir in vanilla extract and sugar if using for flavor.
4. Divide the mixture into small bowls and add different food coloring to each.
5. Pour each colored mixture into a shallow pan or silicone mold to create a thin layer.
6. Let the gelatin set at room temperature for 2-3 hours or refrigerate for faster setting.
7. Once fully set, use a small cookie cutter or knife to cut out sequin shapes.
8. Carefully remove the gelatin sequins and let them dry on parchment paper for 1 hour before use.
Notes
Avoid adding fresh pineapple, kiwi, or papaya as they contain enzymes that prevent gelatin from setting.
Serve chilled. Garnish with fresh fruit or a dollop of whipped cream before serving.
