Creamy Gelatin-Free Panna Cotta made with agar agar for a vegetarian dessert. Simple steps for a perfect Italian treat.
Ingredients
2 cups heavy cream
1 cup whole milk
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 teaspoons agar-agar powder
Instructions
1. In a medium saucepan, combine the milk and agar-agar powder. Let it sit for 5 minutes to bloom.
2. Place the saucepan over medium heat and stir constantly until the agar-agar is completely dissolved.
3. Add the heavy cream, sugar, and vanilla extract to the saucepan. Continue stirring until the sugar dissolves and the mixture is hot but not boiling.
4. Remove from heat and carefully pour the mixture into serving glasses or molds.
5. Allow the panna cotta to cool to room temperature, then cover and refrigerate for at least 4 hours or until fully set.
6. To serve, run a knife around the edges and invert onto a plate, or serve directly in the glasses with fresh berries or sauce.
Notes
Avoid adding fresh pineapple, kiwi, or papaya as they contain enzymes that prevent gelatin from setting.
Serve chilled. Garnish with fresh fruit or a dollop of whipped cream before serving.
