Ingredients
¼ cup cool water
1 packet unflavored gelatin (about 1 tbsp)
1 16.9 oz bottle PWR Lift, flavor of choice
1 5.3 oz carton Greek yogurt, any flavor or milk-fat (if using unsweetened yogurt, add 5–10 drops of liquid stevia or monk fruit)
Optional: whipped cream, berries, etc for topping
Instructions
1. Using a liquid measuring cup, measure out ¼ cup of cool water and pour it into a microwave-safe glass bowl. Sprinkle the unflavored gelatin evenly over the water using a measuring spoon to avoid clumping. Let it sit undisturbed for 5 minutes to bloom, during which it will resemble runny applesauce.
2. Place the bloomed gelatin in the microwave and heat for exactly 5 seconds to liquify it. Use a silicone spatula to check if the gelatin appears clear and fully liquid; if not, microwave for an additional 3-5 seconds. Be cautious not to overheat, as this will prevent the gelatin from setting properly.
3. Pour the room-temperature PWR Lift and Greek yogurt into the bowl with the liquified gelatin. Using a whisk, thoroughly combine the ingredients until smooth and fully incorporated.
4. Divide the mixture equally between two 12-oz glass bowls or glasses using a measuring cup or ladle for even portions. Place the bowls in the refrigerator and chill for 4 hours or until the mixture is firm to the touch.
5. If desired, use a spoon to add toppings such as whipped cream, berries, or additional yogurt to the chilled gelatin mixture before serving.
Notes
Avoid adding fresh pineapple, kiwi, or papaya as they contain enzymes that prevent gelatin from setting.
Serve chilled. Garnish with fresh fruit or a dollop of whipped cream before serving.
